We were thrilled to host restaurant reviewer and food columnist Chris Dagenais earlier this month and even more excited to read his reflections and glowing review in North Shore News of Louis Gervais Fine Foods & Catering in today’s Lifestyle section of the local newspaper!
Chef Louis spent more than an hour on our sunny patio chatting with Chris while he sampled a variety of amuse bouche from our catering menu before moving on to some of Louis’ specialty items from the bistro menu including: celeriac soup with a quenelle of Bosc pear and quince jam (the quince grown on the tree from our patio garden), focaccia topped with charcuterie (coppa ham, prosciutto, and maple ham from nearby Two Rivers), Ahi tuna poke presented atop sliced cucumber and topped with a dollop mayo and toasted black sesame seeds, and spiced carrot cake with a rich cream cheese icing.
From the critical shortage of chefs and cooks in Vancouver to Chef Louis’ long and distinguish career path and philosophy on food and menu creation, these two culinary giants had plenty to discuss while basking in the early rays of spring sunshine.
