Our Fall Cooking Class Schedule is out!

Don’t miss out on your last opportunity to attend a Louis Gervais Cooking Class as we will be rolling out a new concept for 2014! If you’ve never experienced a cooking class before, they are entirely interactive and hands on. You can expect to be well fed, entertained, and elbows deep in Bechamel sauce. All you have to do is bring an appetite and we’ll supply the rest.

The first class this season will be our personal favourite, Spanish Tapas! On September 19th, you’ll learn how to make Chorizo Crusted Lamb Chops, Baked Lardon Mussels, and Escabeche of Black Cod, to name only a few menu items. As well, you’ll also get to taste Nicole’s simple and delicious Sangria! Here is a sneak peak recipe for you to enjoy during the last few days of summer.

Nicole’s Sangria

There are many different ways to make sangria and this recipe is no secret. It comes out best when you use your taste buds to measure. As with many of LGFF’s recipes, use this as a guide and make slight changes based on your tastes. Enjoy responsibly!


1 750 ml bottle of Red Wine (Tip: Merlot or Shiraz works well – value wines are best)
½ cup of Triple Sec/Cointreau
½ cup of White Rum
1 cup of Orange Juice
1 cup Pineapple Juice
splash of Lemon Juice
1 ½ cups Ginger Ale (Tip: substitute Soda if you prefer less sweet)
lots of Fruit (pineapple chunks, slices of orange, lemon, lime, and grapefruit)


Mix all ingredients together and chill, let the fruit soak up all the goodness! Fill each glass with ice and add a cinnamon stick to each (Tip: substitute Spiced Rum to achieve the same effect). Fill the glass with the sangria and top with lots of fruit. Serve and enjoy!

For a refreshing alternative, make a nice White Snagria with a Pinot Gris or Sauvignon Blanc instead of red wine and use melons, apples, and pears for the fruit!

Thursday, September 19th – 6:00-9:00pm
Wednesday, October 16th – 6:00-9:00pm
Tuesday, November 5th – 6:00-9:00pm

Classes are $95.00 per person, plus taxes. Cash bar is available for beer, wine, and non alcoholic beverages.
